Pumpkin Pie Cupcakes

Mini Pumpkin Pie Cupcakes  I love fall recipes and treats :)


Ingredients
Pie
  • 2 cups of can pumpkin
  • ½ cup honey
  • ¼ cup of agave
  • 4 egg whites
  • ½ teaspoon fresh ginger
  • ¼ teaspoon ground cloves
  • ⅛ teaspoon of allspice
  • 1½ teaspoons cinnamon
  • 1½ cups 1% milk
Crusts
  • 1 ½ cups of Hodgson Mill Flaxseed and soy cereal
  • ¼ cup agave syrup
  • 1 tsp vanilla
Instructions
  1. Mix together all crust ingredients until crumbly.
  2. Combine all pie ingredients in a large mixing bowl, and mix thoroughly.
  3. Place the crust mixture in the bottom of non-stick muffin tin evenly. (Depending on the size of you tin you may need two muffin tins)
  4. Add pie mixture on top of the crust.
  5. Bake at 350 degrees F. and bake for 20 minutes or until set.
  6. Enjoy!!
